The Water Chemistry of Dishwashers

Turbidity

Turbidity describes the particles in the water such as dirt, silt and sand. Abrasion or clogging from turbidity can cause these to malfunction and etching of glassware over time. It is recommended that water for dishwashers does not exceed a level of 0.5 NTU turbidity.

To achieve this, we recommend a pre-filter rated at or below 5 microns.

Chlorine and Chloramine

Chlorine is corrosive to metals, especially copper tubing. Corrosion’s negative impacts on stainless steel includes pitting, crevice corrosion and even stress cracking. Good quality carbon filtration will usually be sufficient to remove Chlorine. For Chloramine, seek a high quality carbon filter this is rated for Chloramine removal.

The Chlorine level for dishwashing equipment should be less than 0.2ppm.

Alkalinity

Alkalinity, or Carbonate hardness levels should be below 150ppm. Alkalinity above this level accelerates the formation of scale. An alkalinity lower than 150ppm however doesn’t assure you of a scale free machine; there are many more factors to consider in understanding scale formation. HTS-11 is effective is reducing the formation of scale.

Hardness

The Total Hardness should be < 35ppm. It is the hardness reacting with the carbonates (alkalinity) that creates scale in dishwashers. Scale will build up on heat exchangers, acting as an insulator, preventing efficient heating of the water and ultimately leading to a failure of the exchanger, block small valve orifices and reduce energy efficiency. HTS-11 Is effective in reducing the formation of scale.

pH

Water with a pH lower than 7 is said to be acid and could, under extreme conditions, lead to corrosion of steam equipment. It is recommended that the pH be between 6.5 – 7.8.

Chlorides

Chlorides are common around Australia, predominantly in WA but are also commonly found in SA and Queensland. Chlorides are extremely corrosive, even stainless steel can be affected. Due to the myriad of metals used in modern dishwashers, it is difficult to put an exact figure on a safe limit, but if the chloride levels exceed 30 ppm then ideally some action should be taken. Chlorides can only be effectively removed through Reverse Osmosis. Softening filters have no effect and often make the situation worse by removing the hardness which was partially balancing out the Chloride’s aggressiveness. HTS-11 will reduce the effects of Chlorides by not fully reduce corrosion.
