Unfiltered water out of a tap, is a complex solution of chemicals, organics and minerals, with ranging pH and alkalinity characteristics. Poor quality water can impact espresso beverages in a number of ways:

 

  • Scale can cause poor pre-infusion and channeling through the puck, leading to under-extraction and thus a weak drink.

Everpure MRS-600HE-II

The BL Series RO Systems feature an adjustable blend valve which allows for custom tailoring of the treated water’s dissolved mineral content.

With this feature, a controlled amount of raw water is mixed with the RO water to create a blend containing the desired level of TDS (Total Dissolved Solids). After blending, the water passes through a submicron carbon filter. This final filtration step removes tastes and odors, and insures delivery of ingredient quality water.

This tailored blending process removes just the right amount of dissolved solids from the incoming tap water to achieve the desired final water quality.

With the average recovery of 78%, the MRS-600HE-II system only disposes approximately 1/4 cup of water for each cup of coffee brewed. Its high recovery RO technology yields significant savings in water and sewer charges with a minimal environmental footprint.

The Water Chemistry of Espresso

Turbidity

Turbidity describes the particles in the water such as dirt, silt and sand. High levels of turbidity can cause abrasion damage and clogging of valves on coffee equipment. It is recommended that water for coffee does not exceed a level of 0.5 NTU turbidity.

To achieve this we recommend a filter rated at or below 5 microns.

Chlorine and Chloramine

The only aroma coming from the cup should be the smell of coffee. Excess levels of Chlorine or Chloramine can oxidise the coffee aromatics, oils and flavour compounds, negatively impacting the flavour of the coffee. Good quality carbon filtration will usually be sufficient to remove these.

Alkalinity

Alkalinity or Carbonate hardness levels should be below 100ppm. Above this level, water flow through the coffee grounds can slow and a bitterness can be noticed; machine scaling is also more likely. An alkalinity lower than 100ppm however doesn’t assure you of a scale free machine; there are many more factors to consider in understanding scale formation, but scale can be reduced through treatment of Alkalinity with a blendable hydrogen resin based softener such as Everpure’s Claris Ultra Series.

Hardness

Ideally the total hardness should be between 17 – 85ppm even though what is an acceptable limit is open to some debate. Water at the lower end will cause over extraction of the aromatic oils, whilst water that is too hard will under extract, this then leads to a bitter or sour taste in the coffee.

 

It is the hardness reacting with the carbonates (alkalinity) that creates scale in coffee machines. Scale will build up on heating elements, acting as an insulator, preventing efficient heating of the water and ultimately leading to a failure of the element, block small valve orifices and reduce flow and energy efficiency.

 

If you are in a hard water area, Total Hardness can be reduced by softening or Reverse Osmosis (RO). In areas of relatively soft water like Melbourne over-engineering with softeners or RO above may impair the end result of the coffee, the use of scale inhibiting filters containing Phosphates is a better solution and will leave the mineral profile where is should be as well as greatly reducing the impact of scale on the machine. Phosphate’s are a proven effective and very economical solution for low water hardness areas.

Total Dissolved Solids (TDS)

This is basically everything that is dissolved in the water (Hardness, Chloride etc.) and is the water’s “aromatic oils”. Suggested levels for coffee brewing are between 70 – 200ppm. High levels of dissolved solids can increase acidity, give “heavy” extraction and impart off tastes and odours. Low levels can give a sour taste and a lightness to the extraction as the water itself has no real body. The most effective way to alter TDS above 200ppm is through blendable Reverse Osmosis technology like Everpure’s MRS Series, which is also very low in water wastage compared to conventional RO’s and has received many global sustainability and innovation awards.

pH

Water with a pH lower than 7 is said to be acid and could under extreme conditions lead to corrosion of the equipment as well as imparting a sourness to the extracted coffee. Water with a pH greater than 7 is

alkaline and can cause bitterness in the coffee. In reality a pH of 7 is difficult to achieve so an ideal range would be between 6.8 and 7.4. Everpure’s ESO Series of hydrogen based softeners have a pH buffer to correct pH outside the range.

Chlorides

Chlorides are common around Australia, predominantly in WA but are also found in SA and Queensland. Chlorides are extremely corrosive, even stainless steel can be affected. Due to the myriad of metals used in modern coffee machines it is difficult to put an exact figure on a safe limit, but if the chloride levels exceed 30 – 50 ppm then ideally some action should be taken. Chlorides can only be effectively removed through Reverse Osmosis. Softening filters have no effect and often make the situation worse by removing the hardness which was partially balancing out the Chloride.
